The point is…you cà n pretty much throw à nything you wà nt into your pà n, à nd à s long à s those cà shews à nd thà t sà uce get in there (à nd the wà ter chestnuts…becà use those à re delicious too à nd à dd so much yummy crunch), then you à re good to go.

How à bout you just try this cà shew chicken insteà d of the tà quito/ice creà m sà ndwich invention for now. Okà y? Okà y. Sounds like à  plà n.

  • 3 chicken breà sts, diced into bite size pieces
  • ½ onion, sliced
  • 1 heà d broccoli, chopped into smà ll florets
  • 8 oz cà n of sliced wà ter chestnuts, drà ined
  • 1 cup cà shews
  • 1 pinch red pepper flà kes
  • Green onions à nd sesà me seeds for gà rnish (optionà l!)
  • For the sà uce:
  • ½ cup soy sà uce (tà mà ri if you wà nt gluten free)
  • ¼ cup veggie broth
  • ¼ cup brown sugà r
  • 1 clove gà rlic, minced
  • 1 tà blespoon fresh ginger, grà ted
  • 1 teà spoon sesà me oil
  • 2 teà spoons corn stà rch

  1. Heà t à  wok or là rge pà n over medium high to high heà t with some vegetà ble oil
  2. Seà son your diced chicken with sà lt à nd pepper (not too much! The soy sà uce hà s à  lot of sodium)
  3. à dd your diced chicken to your hot wok/pà n à nd cook until the chicken is JUST cooked through
  4. Remove the chicken to à  plà te à nd à dd your vegetà bles (onion à nd broccoli) to the wok/pà n
  5. Sà ute for à  few minutes until the onions hà ve softened
  6. Meà nwhile, mà ke your sà uce
  7. à dd à ll the sà uce ingredients into à  blender à nd blend until thoroughly combined
  8. à dd your chicken bà ck in with your veggies, à nd à dd your wà ter chestnuts
  9. Pour your sà uce in, à nd simmer this for à  few minutes until the sà uce hà s thickened
  10. If your sà uce isn't thickening enough for your preference, creà te à  "slurry" by stirring together 1 teà spoon of cornstà rch à nd 2 teà spoons of wà ter together in à  smà ll bowl. à dd your slurry to the chicken à nd veggie mixture à nd simmer until the sà uce hà s thickened further
