Sweet and Sticky Thai Chicken Wings
As the chicken wings were in the smoker, I made a sweet and sticky Thai glaze. Soy sauce, sweet Thai chili sauce, honey, lime, ginger paste, garlic paste, Sriracha, and red curry paste.
Sweet and Sticky Thai Chicken Wings
Ingredients
Chicken Wing Marinade
- 3 pounds split chicken wings
- 1/2 cup soy sauce
- 1 Tbsp lime juice
- 1 Tbsp garlic powder
- 2 Tbsps brown sugar
Sweet and Sticky Thai Glaze
- 3/4 cup soy sauce
- 1/2 cup sweet Thai chili sauce
- 1/2 cup honey
- 1 Tbsp lime juice
- 1 Tbsp ginger paste or fresh grated ginger
- 1 Tbsp garlic paste or minced garlic
- 1 Tbsp Sriracha
- 1 tsp red curry paste
- Optional toppings: green onions, crushed peanuts
Instructions
Chicken Wing Marinade
- Put the chicken wings into a gallon size plastic bag. Add the soy sauce, lime juice, garlic powder, and brown sugar. Close the bag and massage it until the marinade is evenly mixed. Put in the fridge to marinate overnight, turning and massaging the bag a few times.
Sweet and Sticky Thai Glaze
- Combine all of the glaze ingredients in a saucepan, bring to a boil, reduce heat and simmer for 10 minutes, whisking often.
Cooking the Chicken Wings
- Remove chicken wings from the marinade. Bake or smoke the chicken wings according to these directions.In the oven: Place wings on a lined baking sheet and put in a 400 degree oven for 45 minutes, flip them halfway through. Brush the glaze on the wings and bake an additional 5 to 10 minutes.In the smoker: Place the wings in a smoker set to 225 degree for 2 hours. Flip them them halfway through. Brush the glaze on the wings and smoke for an additional 10 to 15 minutes.Serve with more glaze on the side, top with peanuts or green onions if desired.
