Instant Pot Wings Crispy, Melt in Your Mouth with fall-off-the bone

The traditional method we usually cook wings is on the stove pan fry, then broil them in the oven. Or barbecue grill then broil them in the oven.

This time after social media raved about Instant Pot (Electric Pressure cooker) chicken wings, I practically bought the Instant Pot just to make wings in it. They promise for wings to be done in 10 minutes.

Mine is special “secret” sauce recipe, because I make it since 2001 and everyone loves the wings and the sauce at our parties. People keep begging me to make wings over and over and my friend who’s hosting the Superbowl party every year will ask me to bring wings of course.

Speaking of the hot sauce, you can also use a pepper sauce if you have any. This time I added just a tiny pinch of Papaya-Habanero sauce to my wing sauce for a killer kick. This PAW PAW Sauce is special to me. It was prepared just for me by Chef Llewellyn Clarke during his sauce making demo when I stayed at Four Seasons Resort in Nevis earlier this year. It appears that pepper sauce is so easy to make. All you need is a bunch of peppers, fresh ingredients and fruits. The best thing is that you can control how spicy it will come out. How to make Instant Pot Wings Crispy, Melt in Your Mouth with fall-off-the bone

  • For the Instant Pot:
  • 3-4lbs Chicken Wing Pieces ( I prefer “wingettes” because they are already cut and ready to put in the pan)
  • 1 Cup Water or Chicken Broth
  • Salt & Pepper to taste
  • For the Sauce:
  • ¾ Cup Franks Hot Sauce
  • ½ Stick of butter (melted)
  • 1TBS Molasis
  • 1TBS Brown sugar
  • 1TBS Honey
  • 1tsp Maple Syrup
  • 1tsp Tabasco
  • 1tsp ketchup
  • 1tsp bbq sauce
  • 1tsp flour (or corn starch) to thicken
  • Note: If you don’t have all the above ingredients – no problem. They may be not as tasty, but try to get the basics – Hot sauce, honey, butter, flour.
  1. Click “Saute” button and place wings inside your IP. Add salt & pepper to taste and sear them 5 minutes on each side.
  2. Remove wings.
  3. Place wire rack on bottom of Instant Pot. (My 6 quart IPnofollow came with a wire rack, if you don’t have one, you can get it online herenofollow or it is okay to skip this step. Your wings will be still good, but may not not be crunchy)
  4. Place wings on top of wire rack.
  5. How to make wings in Instant Pot crispy - Use Wire rack or trivet
  6. Add 1 cup water, or chicken broth, into the instant pot. (I like to use chicken broth because it gives the meat a more flavor infused taste.)
  7. Secure the lid, making sure the valve is SEALED. Press the Pressure cook button (or MANUAL button depending on your IP), and cook for 9 minutes on high pressure mode. Also, you should note that it will take additional 10 minutes for the IP to get into pressure mode)
  8. While the wings are cooking, in a small or medium saucepan mix together the hot sauce. Begin by melting butter over low heat. Once the butter is melted, add flour to it, it helps the sauce thicken later on. Work out all the lumps. After flour you then add the remaining ingredients. Cook it over the light heat until it caramelizes and is nicely blended into the sauce.
  9. When the timer dings, do a QUICK RELEASE.
  10. Turn oven on to High Broil and prepare a baking sheet, using a tin foil base, to put the hot wings on. (It would be even better if you have a rack over the baking sheet – this will help the wings to get more crispy)
  11. Remove wings from the Instant Pot. If you feel that your chicken wings are still too wet, just dab them with a paper towel.
  12. Place wings on baking sheet and broil 7 minutes on each side. If they are not crispy enough, broil 2-3 min more
  13. Dip the wings into the hot sauce mixture. Make sure to fully coat each wing. Then arrange them neatly on the prepared plate. Serve and enjoy!
  14. So this is the key to make Instant Pot Wings Crispy – use a trivet and do not sauce them while broiling. The wings will come out fantastic with fall of the bone feel, melt in your mouth and crispy!
  15. Oh, don’t forget to serve the wings with celery and Blue Cheese!
