Saftige Kürbislasagne mit Spinat & Salbei

Na, hast du dich auch schon schön zu Hause eingenestelt? Vielleicht schon die eine oder andere zusätzliche Lichterkette aufgehängt und ordentlich Kerzen eingekauft?

Oh ja, ich schon! ?

Nach der Zeitumstellung, wenn’s abends früher dunkel wird, brauche ich einfach noch mehr gemütliche Wohlfühlbeleuchtung und Deko in der Bude. It’s Homing-Time!

Und sobald die Temperaturen dann noch weiter sinken, stehen auch wieder sämtliche Comfort-Food-Gerichte auf der Wunschliste ganz weit oben. Neben heißen Frühstücks-Porridges, deftigen Aufstrichen wie Zwiebelschmalz, Suppen und Eintöpfen, natürlich auch Aufläufe wie Lasagne.
Die muss ja nicht immer klassisch mit Tomaten- und Bechamelsauce zubereitet werden! So eine richtig schöne Herbstlasagne mit wärmendem Kürbis, frischem Spinat, duftig-aromatischem Salbei und einem Schuss Weißwein ist einfach wahnsinnig lecker!

Überhaupt: Salbei ist so ein tolles Küchenkraut! Dieses Jahr ist er auf unserem Balkon regelrecht „explodiert“ und gewachsen wie ein Weltmeister. Er hat den Thymian komplett überwuchert, als wollte er uns sagen: „Schaut her, wie toll ich bin. Benutzt mich gefälligst öfter!“ Ist ja schon gut, machen wir ?

Materialien
  • 3 Schalotten
  • 3 EL Olivenöl
  • 1 Hokkaido mittelgroß ca. 750 g
  • 100 g Champignons
  • 175 ml Gemüsebrühe
  • 120 ml Weißwein oder heller Traubensaft
  • 3 TL Salz
  • 400 g Babyspinat
  • 2 Zehen Knoblauch
  • 2 EL Hefeflocken
  • 225 g veganer Quark
  • 8 Lasagnenudelplatten
  • 1 Zweig Salbei

Anleitung
  1. Schalotten würfeln. Öl in eine heiße Pfanne geben, Schalottenwürfel bei mittlerer Hitze 4 Minuten glasig dünsten.
  2. Hokkaido und Champignons in 5 mm große Würfel schneiden, mit in die Pfanne geben und 5 Minuten braten.
  3. Mit Gemüsebrühe und Weißwein ablöschen, mit Salz würzen und bei geringer Hitze 15-20 Minuten garen, bis der Kürbis zerfällt. Anschließend in einer Schale abkühlen lassen.
  4. Backofen auf 200 °C Ober-/Unterhitze vorheizen.
  5. Pfanne zurück auf den noch heißen Herd stellen, Spinat zusammen mit 3 EL Wasser hineingeben und bei niedriger Hitze zusammenfallen lassen. Knoblauch pressen und zusammen mit 1 TL Salz und Hefeflocken unterheben.
  6. 150 g veganen Quark unter die abgekühlte Kürbisfüllung heben und mit Salz und Pfeffer abschmecken.
  7. Auflaufform mit etwas Olivenöl einpinseln. Anschließend nacheinander Kürbismasse, Spinat und Nudelplatten übereinander schichten. 3 Mal wiederholen und mit einer Schicht Kürbisfüllung abschließen.
  8. Zum Schluss den übrigen Quark auf der Lasagne verteilen, die Salbeiblätter darauf verteilen und mit 1 EL Olivenöl beträufeln.
  9. 25-30 Minuten backen.
